Clarifying butter to its essence: Making ghee is like refining gold — you heat butter to drive off water and milk solids, leaving behind pure butterfat with a rich, nutty flavour. The Maillard reaction between milk proteins and sugars creates the characteristic depth of flavour.

Why it matters: Ghee has a higher smoke point than butter (250°C vs 175°C), making it ideal for high-heat cooking. It also has zero lactose or casein, making it suitable for people with dairy sensitivities.

The key insight: Temperature control is everything — too low and you get pale, bland ghee; too high and you get bitter, burnt ghee. The sweet spot is 120-130°C where Maillard reactions produce flavour without pyrolysis (burning).

  2. Maximize conjugated linoleic acid (CLA) and butyric acid while minimizing acrylamide/advanced glycation end products (AGEs).
